Hello and welcome to this section of “Linda’s Kitchen” of my Blog. It’s taken me a while to create, build up my courage, and to launch. I’m just a home cook, with disabilities but hope it will encourage others in recovery or interested in trying. I’m attempting to prove that there is something beyond the “invalid” label. We may be classed as invalids but we’re not “in valid”.
My aim is to show what can be achieved in cooking at home, if you are in recovery or have limited ability / movement. However, my recipes are fairly simple and easy enough to follow for anyone else that would like to try to create some of my dishes in the comfort of their own kitchen.
I cook what I like to eat and what I think might appeal to others. My preference is Oriental cooking but, coming from a mixed race background, I like to do my version of some Western dishes too.
It took me over 16 months to learn how to cut up an onion again after my major Stroke attack in 2019. I was so excited, and sad enough, to take a photo of my effort and even posted it on facebook! However, joking aside, starting to cook again was very good therapy during my recovery period.
Memories with Mum
I grew up smelling the exotic odours of spices coming from our kitchen. I wanted to know more, and spent a great deal of time learning my Mother’s versions of her Indonesian style of cooking. I felt lucky and proud that my Mother would alternate West and Eastern dishes for our Sunday lunches. One week we would have Roast Beef, Yorkshire pudding with all the trimmings, then the following week we’d change over to any of her Asian dishes. However, every week, we used to getting confused as to which week we’d have – English or an Oriental meal!
Mum’s Cooking Recipes: Before darling Mum passed away, she left me a copy of her hand-written cook book. I always feel emotional whenever I browse through the pages and see her special handwriting. However, I hope to honor her memory by producing my own recipes and some versions of hers to share with you at a later date.
MY RECIPES:
The recipe samples below are simple, but not perfect. Not by any “Chef” standards, but enough for cooking at home. They were developed from memories of my childhood and what I have been able to create since. I adapted recipes for you to follow easily. The following sections show some of my favourite recipes, that reveal each stage-by-stage cooking detailed recipe pages of information and photos (not perfect photos but they are mine), to help you cook along the way. I hope these won’t be too complicated to follow – but, if you don’t try – you won’t be able say “Can’t” ……. Perhaps you might be able to improve them!
I will keep adding to my list of dishes from time to time, so please look out for any updates!
