My recipe shows how to cook with pre-cooked prawns – either bought or cooked yourself. Or with fresh King prawns. The final result is the same.
INGREDIENTS:
500 – 750 grms. Fresh King Prawns (Peel, de-vein to butterfly – if fresh – add after clams been in hot pan for a minute)
500 grms. fresh baby clams
1 – 2 Garlic cloves ( finely chopped or minced)
1 Spicy red pepper (chopped finely)
1/2 Teasp. powdered paprika
Pinch salt & black pepper
Cup of dry white wine
1/2 Teasp. sugar
Handful chopped fresh parsley – for garnish

If you have pre-cooked prawns rinse and leave aside for preparation later ( de-head, shelled & de-veined).
Make sure your fresh clams are rinsed and leave aside – ready to cook later.
In a deep pan / wok – fry your onions, garlic, chopped chilli & paprika – stir until aromatic.
Make sure your cooked prawns are de- headed, shelled and de-veined, which would “butterfly” your prawns when heated. Fresh prawns should be de-headed, peeled & de-veined then you can add later, a minute or so after your clams heated in your pan The prepared pre-cooked prawns can be added last minute as soon as clams are open – mix until the prawns are heated and start to “butterfly”. You’ll be surprised but the final result is the same ….
When the frying pan is sizzling – add your white wine, sugar (to taste) and mix well. When ready, add your clams.
Let the mix simmer until you see the clams start to heat up – in case of fresh prawns – you can add now .
In case of pre-cooked prawns – add to the mixture when the clams are starting to open.
Mix well until all clams are open and the prawns start to open their “Butterfly” backs. Then you are ready to serve.
Serve in a little bowl. Garnish with chopped parsley. Serve with crusty bread slices to soak up the juices or a side salad. Hope you will enjoy …….
