I hope you will like my version of a well-known Oriental dish- great for a snack, starter or a side dish to a main course.
This is a very tasty and light dish – Doesn’t take a great deal of time to prepare but a very simple, quick and an effective way to impress your family and friends.
INGREDIENTS:
Minced Chicken Mix:
1/2 – 3/4 kilo minced chicken meat (breast is better)
1 Onion (finely chopped)
1/2 Large red pepper – finely diced
1/2 Large or 2 – 3 small green peppers – finely diced
1 Large carrot – finely diced
1 – 2 garlic cloves – finely chopped or minced
Sauce:
1/2 Teasp. ground ginger
1 Tblsp. sesame oil
3 Tblsp. kecap Manis (sweet soya sauce)
1 Tblsp. red wine vinegar (malt vinegar will do)
1 Tblsp. runny honey
1 Teasp. sambal oelek (salty chilli sauce)
2 Teasp. white sugar
To serve with:
Long lettuce leaves and a couple of chill dips.
Your “Starter Chopping Board”
Heat a drizzle of olive oil in a deep pan / wok, when hot, then add your minced chicken meat – you can hear it sizzle. Season with a pinch of salt and black pepper.
Mix well and fry until the meat is cooked. Leave meat aside while you prepare the pan / wok for the rest of the ingredients.
In the meantime, prepare your sauce ingredients in a bowl.
With the rest of the oil in the pan / wok add the diced carrots. Sautée the carrots until slightly tender. Add a bit more olive oil if necessary.
Add the chopped onions and garlic & lightly fry for a 1 – 2 minutes.
Ensure you mix the vegetables well until cooked to your satisfaction – a bit still al-dente.
Add the red / green peppers to the mix.
Mix well and fry over low heat for another 2 minutes.
Add the cooked minced chicken meat to the pan / wok.
Mix the ingredients well over a low / medium heat.
Add the sauce to your mixture.
Mix well until the mixture is well blended. Place your long lettuce leaf cups on a platter. Spoon your warm minced chicken mix along the centre of the leaves and garnish with chopped spring onions serve with chilli soya sauce or sweet chilli dip to drizzle into you lettuce wraps.
