Prawn Curry Tagliatelle

When I first introduced this dish to our restaurant menu – it fast became a regular firm favourite. This can also be done with chicken as an alternative.

A simple but sumptuous and rich dish that should please your family and dinner guests.

INGREDIENTS:
1/2 – 1 Kilo fresh king prawns (or 2 chicken breast cut into bite size pieces as an alternative).
1 Onion ( chopped finely)
3 – 4 Mushrooms (sliced)
1 – 2 Garlic cloves (finely sliced / chopped)
Teasp. powdered paprika
1 Tablesp. curry powder (depends on spice tolerance – medium is advisable)
1 – Teasp. Curry paste (I use Madras but depends on spice tolerance)
Shot of brandy (optional – but nice!)
1/2 Cup of fish / chicken stock – homemade chicken stock recipe HERE)
1/2 Cup cream (to thicken sauce)
3 – 4 portions of tagliatelle (or choice of pasta of preference)
Handful of fresh coriander (leave some to garnish final dish)
1 Fresh Chilli (optional finely chopped to garnish & will make dish little more spicy)

STARTER CHOPPING BOARD

Add a drizzle of oil to a deep pan / wok then when hot, start to fry your onion and garlic.

Fry for a few seconds, then add the sliced mushrooms and a bit of black pepper. Meanwhile, put your pasta on the boil until cooked (al dente) drain off and leave to the side.

Fry of the contents of your pan a bit more until mushrooms are half cooked and onions start to become translucent.

Add your fresh prawns / chicken and continue to fry until partially cooked.

Add your brandy, stock, curry powder, paprika & curry paste and gently mix well over a low heat.

Quickly add the cream to thicken the sauce – you can add 1/2 teasp. of sugar to sweeten the sauce if you like.

Mix well until sauce becomes a golden colour before you add some fresh coriander – then mix together on a low heat.

Add your cooked tagliatelle / pasta of preference and add to the pan.

Gently fold the pasta into the mix over a low heat until the pasta is well coated by the mixture.

Your dish is ready to serve with fresh coriander and chopped chilli (optional). Some grated parmesan on the side would be nice. I hope you will enjoy this dish.
