INGREDIENTS
Sirloin of Pork, otherwise known as Solomillio

Marinade:
1/2 teasp. brown sugar
1/ 4 cup of runny honey
1/4 cup Hoisin sauce (Chinese)
2 tblsp. soy sauce (preferably Sweet ketchap Manis)
1 teasp. Chinese 5 spice powder
1 tblsp. olive oil
2 teasp. red food colouring

Your Starter Chopping Block

Place your Pork into a zip lock bag then add the marinade ingredients.

Zip lock the bag and shake the contents until well mixed. Leave in the fridge for at least 3 – 4 hours. The longer the better. Keep turning and shake the bag at regular intervals. It would be better overnight – the longer you leave, the deeper the colour of the marinade has soaked into your meat.

Place your pork into a baking tin / oven-proof dish lined with foil. Keep 1/2 of the marinade aside for regular basting purposes. Gradually roast the pork for 20 / 30 minutes in a medium heat – or low and slow for longer at a low heat. Baste at regular intervals to keep the meat moist.

Cook the pork until the meat is tender, but not falling apart. Leave to rest for around 10 minutes.

Meanwhile place the rest of the marinade into a sauce pan. Add 2 – 3 tablespoons of runny honey and gradually heat, stirring at regular intervals.

When the sauce starts to thicken and gets slightly “syrupy” – it is ready to start preparing your plate.

Cut your meat into fairly thick slices. The rim of the pork slices should be a darker colour, which will make your meat look attractive when you plate up.

Serve with rice and any vegetable you might prefer. Drizzle the heated marinade sauce over. I hope you will enjoy.
