Fish and Clams in White Wine

This can be a spectacular dish to present. I chose Dorada white fish, which is meaty and succulent. However, can equally work with any other fresh white fish of your choice.

INGREDIENTS
2 medium sized fresh fish (pre-cleaned by fishmonger)
2 garlic cloves (sliced finely, powdered or grated)
1 medium onion (sliced finely)
1 red pepper (finely sliced)
red chilli (finely chopped – optional)
2 – 4 button mushrooms (sliced and optional)
1 – 2 cups white wine
1 cup fish stock
1 – 2 teaspoon corn flour (diluted in a little water – to thicken sauce)
1/2 kilo fresh clams
2 teaspoon powdered tumeric
1 teaspoon powdered cumin
1 teaspoon powdered coriander
1 teaspoon powdered ginger
1 – 2 tablespoon brown sugar (depends on your sweetness taste – keep adding
gradually until satisfied)

Your “Starter Chopping Board”

Clean and prepare your fish in a baking tray – you can score the skin a few times to allow some sauce to be absorbed while baking. I like to line the baking tray with foil, as it’s easier to later clean up after you add your sauce for cooking.

Start frying your onions and garlic in a separate wok /shallow pan, until translucent.

Sprinkle the sliced red pepper and some onion slices over the fish.

Add your chopped chilli and mushrooms to you fried onions. Stir for a couple of minutes.

Add the rest of your condiments and mix well for 1 – 2 minutes.

Make sure the mix is well cooked, but not overcooked.

Add your white wine, fish stock and corn flour mix and allow to simmer for a few minutes. Add the sugar gradually to suit your taste.

Pour some of the sauce on the fish, cover with foil – to seal in the flavour and bake in the oven on a medium heat for around 30 – 45 minutes.

Meanwhile, make sure your fresh clams have been thoroughly rinsed & washed in water.

Add the clams to your sauce. Simmer for a few minutes and stir occasionally.

When the clams start to open, your sauce is ready to serve onto your cooked fish dish.

Serve your fish with boiled potatoes and green vegetables. On the other hand, if you prefer rice and more chopped chilli garnish – that can work too! Pour your clam and wine sauce over your fish and you are ready to serve. Hope you enjoy.
