Prawn and Chicken Noodles – Udang & Bahmi Goreng

This is a lovely and not very spicy mix of King prawns, chicken, vegetables and noodles as a different dinner party dish to offer to your guests. I’m sure this should go down well – or just as a “comfort dish” at home with someone you love or alone.

INGREDIENTS:

2 chicken breast (chopped into pieces)
6 – 8 king prawns (shelled & de-veined)
4 shallot onions and 1 carrot (finely sliced)
1 or 2 garlic coves (finely grated)
Chinese brochilli (chopped into stalks)
1 or 2 small red birds eye chiilies ( optional for more spice)
Handful of fresh bean sprouts
Green Chinese cabbage (or normal) chopped
1 teaspoon sambal oelek
1 teaspoon sesame oil
2 table spoon corn or olive oil
3 table spoon kecap manis (sweet soya sauce)
Crushed peanuts
Egg cook as omelette and sliced into strips
Ramen or thin egg noodles (simmer for 3 minutes)
Handful of chopped fresh coriander (cilantro) – for garnish

Your “Starter Chopping Board”

Finely chop shallot onions, garlic cloves, ginger, broccoli stalks, cabbage and chillies (optional).

Prepare the prawns by shelling and de-veining. Cut up the chicken into bite-sized pieces. Lightly fry chicken in hot oil in a wok / shallow pan for 1 – 2 minutes. Add the prawns until pink. Leave to drain aside on a sheet of kitchen towel to dry & drain on a separate plate. Meanwhile cook your noodle in a pan of boiling water and then drain off

Add the chopped vegetables, carrots and been sprouts to the wok / pan and lightly fry for 2 minutes. You could add a crumbled stock cube and seasoning of salt and pepper while you fry.

Add the partly cooked chicken and prawns, sambal oelek, sugar, sesame oil and kecap manis to the wok / pan. Stir fry for 1 – 2 minutes to ensure the vegetables are still al dente.

Mix well and add previously cooked noodles – may be a splash of brandy for interest and add to the sauce (optional)! Stir fry until happy everything mixed well and all cooked throughly.

Serve with white rice (nasi), topped with sliced up omelette and garnish with prawn crackers, crushed peanuts and chopped coriander. Hope you will enjoy.
